As we head into warmer weather, I wanted to share a recipe that’s a real staple in my summer meal rotation, especially for a quick lunch or super-easy dinner. It’s my go-to Tuna Mac & Cheese, and honestly, it’s a lifesaver when I want something satisfying without much fuss.
Why It’s a Summer Go-To for Me
You know those summer days when you’d rather be outside than spend forever in the kitchen? That’s where this recipe truly shines. The biggest draw for me is how incredibly quick it is - we’re talking about having a meal ready in about 17 minutes flat from start to finish. It’s made with just a few pantry essentials, so it’s perfect for when you haven’t planned much but still want something tasty and comforting. It’s also light and refreshing, which I really appreciate when it’s warmer outside.
Little Touches I Like
This dish is wonderfully simple on its own, but I almost always finish it with a good sprinkle of shredded Parmesan cheese and a bit of fresh parsley if I have some on hand. It just brightens it up and adds a little extra flavor that I love.
Keeping Things Easy
The beauty of this recipe is its simplicity. You start with a box of your favorite mac & cheese. One of the things that makes it so quick is that the frozen peas just get tossed in with the pasta while it’s cooking - so easy! Then, you stir in the drained tuna and a can of cream of mushroom soup to make it creamy. That’s pretty much it! It’s the definition of a low-effort, high-reward meal, which is exactly what I’m looking for on a busy summer day.
It’s definitely one of those recipes that shows good food doesn’t have to be complicated. I hope it becomes a favorite for you too, especially when you need something delicious quickly!
I’d love to hear if you try it out!
My Easy Tuna Mac & Cheese
Yields: 4 servings
Prep time: 5 mins
Cook time: 12 minutes
Ingredients
1 box (14.5oz) mac & cheese (any brand you like)
1 can (15oz) cream of mushroom soup
2 cans (6oz) albacore tuna (drained)
1 bag (12oz) frozen peas
Shredded Parmesan cheese (for serving)
Fresh parsley (chopped) (for serving)
Directions
Get your mac & cheese cooking according to the directions on the box. Partway through the pasta’s cooking time, add the frozen peas right into the pot to cook along with the pasta.
Once the pasta and peas are tender, drain them well.
Make sure your tuna is drained, then add it to the pot with the cooked mac & cheese and peas. Stir in the cream of mushroom soup. Mix everything gently until it’s all combined and nicely heated through.
Serve it up, and I definitely recommend a sprinkle of Parmesan cheese and a bit of fresh parsley on top if you have it.
Hope you enjoy this quick and easy favorite!
