This isn’t just any patty melt; it’s my go-to version, perfect for those busy weeknights when you crave something satisfying or for a casual weekend cookout with friends.

This sandwich has been a fan favorite since the 1940s, and for good reason! It’s a beautiful combination of a juicy burger and a gooey grilled cheese. My take retains all that classic comfort while simplifying the process, making it genuinely easy without skimping on flavor. Think of it as a warm, cheesy hug in sandwich form.

So, grab a cup of coffee (or your favorite beverage of choice!), and let’s talk about how to make this deliciousness happen in your kitchen.

What Makes This Patty Melt Special?

For me, a great patty melt is all about a few key things: perfectly caramelized onions, a well-seasoned patty, and that signature cheesy, buttery, toasty bread. My secret? I assemble it much like a grilled cheese! This method, which I picked up from the brilliant Pioneer Woman, Ree Drummond, ensures maximum meltiness and a wonderfully crisp exterior. It’s genius, and I can’t wait for you to try it!

We keep the burger seasoning simple - just some Worcestershire sauce, salt, and pepper. The real stars are the quality of your beef (I often use 80/20, but 90/10 works great too!), those slow-cooked onions, and of course, the Swiss cheese.

The Magic is in the Onions (and a Little Patience!)

The first step, and arguably one of the most important, is caramelizing the onions. We’re going to saute them slowly in butter over medium-low heat. This isn’t a step to rush! It takes about 20-25 minutes for them to get that beautiful golden brown color and soft, sweet flavor. Trust me, you can’t rush perfection here. Once they’re done, I like to drain them on a paper towel-lined plate to eliminate any excess oil.

Subscribe now

Building Your Masterpiece

Once your onions are dreamy and your patties are cooked, it’s assembly time! This is where the “patty melt grilled cheese” magic happens. You’ll butter one side of each slice of rye bread. Then, it’s butter-side down in the skillet, followed by a slice of Swiss cheese, your burger patty, a generous pile of those amazing onions, another slice of cheese, and finally, the top piece of bread (butter-side up, of course!).

Cook it until golden brown on both sides, letting the cheese get all ooey and gooey. I like to put a lid on the skillet for a bit to help steam the cheese and ensure it melts perfectly without the bread burning.

It’s a simple process, but the results are anything but ordinary.
