Holidays, birthdays, the kind of Sunday dinners you still think about decades later. When she shared the recipe with me, I understood immediately why it had been kept close.</p><p>Aunt Dot is no longer with us, but this recipe is. But honestly, the sky&#8217;s the limit here! You can use pepperoni, or get creative with veggies like peppers and onions - whatever you like! Think of that beautiful dough as your canvas. Here are a few combinations that have been hits in my house or that I&#8217;ve been wanting to try:</p><ul><li><p><strong>The Classic Pepperoni</strong>: Can&#8217;t go wrong with pepperoni and lots of melty mozzarella. A little sprinkle of Parmesan in there is nice too!</p></li><li><p><strong>Veggie Power</strong>: Saut&#233;ed mushrooms, bell peppers, onions, maybe some spinach - all tucked in with ricotta and mozzarella. So good!</p></li><li><p><strong>Sausage Fest</strong>: Cooked Italian sausage (crumbled, of course) with sweet peppers and onions.</p></li><li><p><strong>Chicken &amp; Broccoli</strong>: Kids are more likely to eat broccoli when it&#8217;s wrapped in dough with chicken and cheese!</p></li><li><p><strong>Spinach &amp; Ricotta</strong>: Sometimes, simple is best. A creamy mix of ricotta and saut&#233;ed spinach is just lovely. </p></li></ul><p>Just a little tip: make sure any meats are cooked through and your veggies are softened before you add them to the filling. You want to season every layer for the best results!</p><h2>Freezer-Friendly Magic: Calzones Whenever You Want!</h2><p>Okay, so this recipe makes about 16 calzones. Now, there&#8217;s no way myself or my family or I will eat that in one sitting! So, to solve this problem, we just freeze them. That way, we can have an easy and quick lunch (or dinner!) any time during the week. It&#8217;s a lifesaver. </p><p>Here&#8217;s my super simple method for freezing:</p><ol><li><p><strong>Assemble First</strong>: Get your calzones all made up, just like the recipe says, but hold off on brushing them with the egg wash for now.</p></li><li><p><strong>Flash Freeze</strong>: Lay the unbaked calzones in a single layer on a parchment paper-lined baking sheet. Stick the whole tray in the freezer for about an hour or two, just until they are frozen solid. This is key so they don&#8217;t all stick together in a giant calzone blob.</p></li><li><p><strong>Bag &#8216;Em Up</strong>: Once they&#8217;re solid, you can transfer them to a freezer bag or a freezer-safe container. They keep really well - the official word is up to a year, but they never make it that long in my house!</p></li></ol><p><strong>Baking from Frozen</strong>: When you&#8217;re ready for a calzone, just preheat your oven to 400&#176;F (204&#176;C). No need to thaw! Place them on a baking sheet, give them a quick brush with a beaten egg if you want that golden look, and bake for about 20-25 minutes. Keep an eye on them, as oven times can vary, but you&#8217;re looking for golden brown and heated all the way through.</p><h2>A Few Little Tips I&#8217;ve Picked Up</h2><ul><li><p><strong>Give Those Rolls Time</strong>: When you&#8217;re thawing the frozen rolls, just place them on a sprayed baking sheet, cover them with plastic wrap, and then a kitchen (tea) towel. They&#8217;ll need about 2-3 hours to thaw and rise, depending on how warm your kitchen is.</p></li><li><p><strong>Roll it Thin</strong>: When you&#8217;re rolling out the dough, try to get it paper-thin. It really makes a difference. Don&#8217;t forget to lightly flour your surface and your rolling pin! Take your time so you don&#8217;t tear it.</p></li><li><p><strong>Seal the Deal</strong>: When you fold the dough over, take a second and seal those edges well. I like to take the underside of the dough and roll it over the top seam, pressing down as I go. Pair with the earthy flavor of roasted parmesan potatoes, and you have a perfect meal. The best part? This simple, elegant meal can be on the table in less than an hour. It&#8217;s so fancy that you may make your significant other believe they forgot your anniversary. </p><h2>History of Dijon Chicken</h2><p>Dijon chicken is much younger than you might think. It was created in the 1930s by the wife of Gaston G&#233;rard, the Mayor of Dijon, France. The story goes that the renowned hostess had a bit of a mishap while preparing a chicken dish for the famous gastronomist Curnonsky (Maurice Edmond Sailland).</p><p>Mrs. G&#233;rard dropped a jar of mustard and some spices into her dish as it was cooking. Instead of letting the dish be ruined, the couple added wine, cr&#232;me fraiche, and grated Comt&#233;. Thus, the original dish was born. Curnonsky loved the dish and named it Chicken Dijon.</p><p>Is the story true or just a tall tale designed to make this humble dish more exciting? Only history knows the answer to that. Unfortunately, my efforts were unsuccessful, and I couldn&#8217;t find much information. With just four ingredients and minimal effort, any cook can prepare a tasty and inspiring chicken dish. Serve it with roasted parmesan potatoes as a side, and dinner is sure to impress. It's clear that the flavor profiles of mustard and cheese complement each other perfectly. </p><p>Even though this meal is one of the easiest I have in my collection, it can be deceiving due to the presentation. I&#8217;ve had friends and significant others exclaim how I spoil them with &#8220;fancy&#8221; meals. The reality is quite different; I simply coat a basic chicken breast with mustard, bread it, and pop it in the oven at the last minute. Not bad for 15 minutes of work.</p><h2>Make it Your Own</h2><p>Both my crispy Dijon chicken and roasted parmesan potatoes are very simple recipes with few ingredients. Modifying this type of recipe is a little more challenging, but experimentation is still possible. The easiest place to start is by playing with the mustard. While this is Dijon chicken, try using grainy or stone-ground mustard. I prefer Grey Poupon original but sometimes substitute it with a German stone-ground version. This straightforward step can make a significant difference in flavor.</p><p>Another way to experiment with the chicken is to skip the searing before placing it in the oven. I know this may sound crazy, but when I have thin chicken pieces, I forgo the skillet and go straight to the oven. This helps ensure the chicken doesn&#8217;t overcook. It comes out much lighter than when seared, but I&#8217;m okay with that. If you&#8217;re fine with not having a deep golden color on your chicken, then give it a try.</p><p>Lastly, you can always swap out the side dish. I enjoy having roasted potatoes with my chicken, but sometimes I change up the seasoning or even the cheese. There are no limits to the combinations you can create, and I can&#8217;t wait to see what you come up with.</p><h2>Final Thoughts Before the Recipe</h2><p>Crispy Dijon chicken and roasted parmesan potatoes are truly the perfect combination, whether you're preparing dinner for your family or enjoying a date night.
